Sometimes you get home from work or school pickup and making dinner feels wayyyy too hard. You think of ordering UberEats, but then remember you spent all your splurge money on shoes (thanks, Barefoot Investor!).
Enter: the humble toast dinner.
But toast-for-dinner need not be sad. In fact, with the right toppings, it can be EPIC. Here are our favourites.
Classic (blue) cheese
This is not a fancy grilled cheese with sauces and pots and pans. It's a quickie, but it tastes damn fine.
Ingredients
- Sourdough
- Cambozola cheese (blue brie) - I like the Lighthouse Blue Brie
Method
1. Lightly toast the bread in the toaster.
2. Slice a generous helping of cheese onto the toast, then put under the grill until it's semi-melted. Enjoy!
Salmon Lover
Simple, easy, delicious.
Ingredients
- Any bread you like - personally I love a dark, heavy rye
- Smoked salmon
- Cream cheese
- Capers
- Lemon
- Dill, to garnish
Method
1. Toast the bread in the toaster.
2. Generously spread cream cheese onto the toast. Then add salmon, capers, and a squeeze of lemon juice.
3. Garnish with dill if you're feeling fancy - otherwise skip it!
Note: You could also add avocado and red onion to this, if you have it!
Protein hit
Ingredients
- Any bread you like
- Sardines
- Egg
- Olive oil
Method
1. Put the egg into saucepan to boil, as usual.
2. Toast the bread (surprise!)
3. Drizzle the bread with olive oil, then top with sardines and (peeled) boiled egg
4. Salt and pepper, of course!
Dessert for dinner
If you want to make this a bit extra fancy, you can caramelise the bananas. If not, just whack 'em on raw, it's still damn delicious.

- Banana
- Any bread you like
- Bit of butter
- Peanut butter (Crunchy, of course! And get the good peanut butter without all the sugar and vegetable oils. Good job!)
- Honey
Method
1. Heat up a pan and add a bit of butter to it.
2. Cut the banana into coins and add them to the hot pan.
3. Meanwhile, toast the bread and spread with peanut butter. Add the caramelised banana and a drizzle of honey.
